Slow Cooked Beef Casserole & Cheesy Dumplings

A good hearty winter casserole. Great for the whole family. I love recipes like this because you can basically set and forget.

Serves 6
Slow Cooked Beef

600gms Beef Diced

400gm Tinned Tomatoes Chopped

2 Cups Beef Stock

1 Large Carrot Diced

200gms Mushrooms Sliced

2 Celery Sticks Thickly Sliced

1 Brown Onion Diced

3 Bacon Rashers Diced

3 Garlic Cloves Crushed

2 tsp Thyme Dried

1 Tblsp Corn Flour

Cheesy Dumplings

70gms Self-Raising Flour

1/2 tsp Baking Powder

40gms Butter

50mls Milk

1/4 Cup Parmesan Cheese Grated

1/2 Cup Tasty Cheese Grated

1 Tblsp Chives Chopped Fresh or Dried

Slow Cooked Beef
  • Place all the ingredients in slow cooker. Mix Well.beef casserole ingredients
  • Cook for 4hrs on High or 6hrs on Low.
  • Add corn flour if it needs thickening. Do this before adding Dumplings.
Cheesy Dumplings
  1. Mix flour and baking powder.
  2. Rub butter into flour until it resembles breadcrumbs.
  3. Add chives and cheeses and gently combine with milk to form a dough.
  4. Form into inch and a half round balls and place directly on top of casserole. Leaving room for dumplings to expand. Cook for 45mins or until the dumplings have puffed up.slow cooked beef casserole with cheesy dumplings
