Potato Bake with Bacon and Onion

Mr Wonderful’s favourite food is potato so this dish is a big hit in our house.

Serves 6

6 Large Potatoes Peeled & Sliced

300ml Cream

4 Short Cut Bacon Rashers Diced Finely

1 Small Onion Diced Finely

3 Cloves Garlic Crushed

2 Cups Tasty Cheese Grated

Powdered Chicken Stock

  1. Preheat oven 160°C fan forced.
  2. In a pan cook bacon, onion and garlic until onion is soft and translucent.
  3. In a casserole dish layer potato, a thin sprinkling of bacon mix, a thin sprinkle of cheese, a few spoons of cream and a sprinkle of chicken stock. Repeat 3 times and finish with cheese then bacon mix. Pour remaining cream over the top and a final sprinkle of chicken stock.
  4. Bake in oven covered for about an hour and a half or until soft. You can speed this process up by cooking the potatoes before slicing. Remove cover and bake for a further 20mins or until top is browning and crispy.
