Mexican Corn Chip Dip
This is my favourite dip when entertaining, so simple and yet so so tasty.
1 Large Tub Sour Cream
Packet Taco Seasoning
1 Ripe Avocado Mashed
2 Cups Grated Tasty Cheese
2 Spring Onions Sliced Finely
1. Put half the packet of taco seasoning in tub of sour cream and mix well. Once mixed taste and add more seasoning to suit. I usually end up using 3/4 of the packet.
2. In a large shallow bowl spread avocado evenly across the bottom.
3. Pour sour cream mix over avocado.
4. Spread grated cheese across the top and then sprinkle spring onion over.
The idea is to serve with corn chips and when you dip you get a bit of every layer. Also you can line the bowl with corn chips but this can get quite fiddly.
