These fritters are a quick and easy way to use up leftover roast meat and roast veggies.
Recipe Makes Approximately 6 Fritters
1/3 Plain Flour
1 Cup Milk
1/3 Self Raising Flour
1 1/2 Cups of Roast Meat & Roast Veggies cut up thin and small.
1 Tbls Butter
- In a bowl whisk egg, flours and milk, adding milk slowly until it gets to a batter consistency.
- Add meat and veggies and mix well.
- Heat butter in a pan, once melted add spoonfuls of the mix to make fritters of your desired size. I use about 1 heaped Tbls for each. Cook on a medium heat.
- Once you see air bubbles popping and them not filling back in with batter then they are ready to turn. Second side cooks quite quickly so keep an eye on them.
